Years ago, I purchased my first professional chef's knife while traveling, and now it just wouldn't cut right. 

A major point that both survival schools and culinary schools make is the value of a sharp and ready knife. I got the chance to bring the chef's knife I purchased years ago to class one day, and it was anything but ready.
